Simple, delicious and nutritious "cottage cheese with charred mini peppers, peas, lemon zest and crushed red pepper". Do you like cottage cheese? I hadn't had cottage cheese for a long long time, and this dish surely rekindled my love for it. I absolutely adore fresh cheese (another dairy that gives me troubles every now and then). Although it doesn't flip my stomach upside down like milk and ice cream do, I still need to be careful with how much I eat. I think I stopped eating cottage cheese after having an upset tummy in Turkey one and half year ago, thanks to their delicious fresh cheese that was served at breakfast all the time. It was so hard to control myself๐Ÿ˜“ So with that experience in mind, I decided to try cottage cheese again. And I wanted to make a dish that highlights its beautiful texture and freshness and has more colors at the same time (you know it ain't my dish if it wasn't colorful๐Ÿ˜‰). So I served 300g/10.6oz. cottage cheese with 170g/6oz. sweet mini peppers that I charred in a dry hot pan for a few minutes, 1 cup. cooked green peas, the zest of whole lemon, and a generous sprinkle of crushed red pepper. I seasoned with pink Himalayan salt and freshly ground black pepper. I ate this dish as a breakfast (not on my own of course, I sharedโ˜บ๏ธ) but I think I could eat this as a breakfast, lunch and dinner. And I felt super energized afterwards, probably thanks to all the protein, calcium and vitamins๐Ÿ’ช๐Ÿป โฃ

The base is made with natural Greek yogurt, frozen raspberries and a few blackberries. The toppings are blackberries, blueberries, crushed blackberries with honey and pistachio. I used frozen raspberries to make it more like ice cream; one of my favorite foods that I can no longer have as much as I want to because of minor lactose intolerance I've developed in recent yearsโ˜น๏ธ Although it wasn't the real ice cream, it certainly looked and tasted as good. Is there anything better than the combination of tomatoes and eggs in the morning? Very few probably. I initially planned to make tomato salad then I noticed that some of my tomatoes weren't quite ripe. So I turned to my tiny oven for help instead. The quickest and the most delicious way to transform under ripped tomatoes is to roast them. Look how beautiful and juicy they've become๐Ÿ˜‹ Tomatoes are sliced (about 1cm/0.4" thick) and roasted with a little bit of olive oil, salt, pepper and a sprinkle of dried thyme at 200c/392f oven for 12-14 minutes. Meanwhile I toasted breads in a dry non stick pan, and made olive oil basted fried eggs in the same pan afterwards. And that's it, the whole thing took less than 15 minutes (I spent much more time for the photo..๐Ÿ˜… it's inevitable I guess). I don't need to tell you how delicious these toasts were right? Panzanella with tuna stuffed peppers, capers, green apple and dill. Ever since I made my first panzanella last month I never looked back. It is hands down the best way to eat stale bread. I used to buy a loaf of bread worrying about leftover, this time I intentionally bought a bigger loaf thinking about delicious panzanella I could make when it goes stale๐Ÿ˜†And it did not disappoint! Umami packed tuna stuffed peppers and capers, fresh and tangy green apple create a beautiful harmony of flavors and the (revived) bread is a perfect vehicle that carries it all. And the best part? it is real simple to make๐Ÿ˜‰ Here's what I did, โฃ

- Soak 40g/1.4oz. stale sourdough bread (chopped or torn into bite size) in 1/2 cup. water for a few hours until soften โฃ
- Mix in 1 tbsp. extra virgin olive oil, 1 tbsp. apple cider vinegarโฃ
- Add 10 tuna stuffed peppers/ peperoncini ripieni di tonno, 2 tbsp. capers โฃ
- Add 1/2 green apple (chopped to bite size) and 1 tbsp. finely chopped dillโฃ
- Finish with some lemon zest and freshly ground black pepperโฃ

This year I've made Japchae (sweet potato noodles and vegetables), kimchi pancakes, aehobak jeon(Korean zucchini fritters) and a simple spring onion salad. These are some of the traditional celebration dishes we enjoy during Lunar New Year holiday. Many Koreans, usually women in the family, spend at least whole day preparing food like these twice a year (another one is for Mid-Autumn festival). Although I did all this by myself, I didn't feel that lonely because I was picturing my mom and aunties chatting away and preparing food together while my grandma nagging and bossing around everyone๐Ÿ˜… โฃโฃ

These holiday foods are known to be quite labor intensive to make, especially the Japchae. But I do have a couple of cheat ways that could make the process slightly easier. We all need a little pink in our lives. Whether you're men or women๐Ÿ’•Although February naturally reminds us of Valentine's day, I was kinda busy thinking about what to cook for Lunar New Year day, which is on 12th this month. But I must have been in a mood for V-day subconsciously,  because I bought roses, which are not the flowers I normally buy, and made this pink radish and celery dish a few days later. And guess what, they all looked so pretty together! I'm quite happy with how it turned out because the dish was just something that I whipped up to use leftover veggies. 200g/0.7oz. pink radishes and 120g/3.9oz. celery (cut into 1.5-2cm/0.6-0.8inch thick 3-4cm/1.2-1.6inch length) were coated with 1tbsp. olive oil, salt and pepper to taste and roasted at 220c/428f pre heated oven for 20-25mins. And I served them with (yet another) leftover quinoa salad from the day before. Super simple, healthy, and as delicious as it looks๐Ÿ˜‹ I think this could be a great Valentine's day starter or side, don't you think?โฃ

I just can't wait to put last week behind me. After a hectic few days I was so looking forward to a BBQ at friend's rooftop on Saturday afternoon. The weather was beautiful, I felt great after a quick yoga and was ready to get into the shower. Literally a second before I walked into a bathroom I got a message from a group chat saying that there was a fire in a unit on 36th floor in our building and people from 36th FL and lower were evacuating. I was naked, panicking and trying to figure out why we didn't hear any fire alarm. Basil parsley mint pesto with Chinese egg noodles. Yes egg noddles, not pasta๐Ÿ™‚ I had a bunch of leftover herbs, which of course I blitzed and turned into pesto for a delicious pasta dish as usual. The next day I headed to the kitchen, almost automatically put a big pan of water on a stove, and started browsing through many different kinds of dried pasta and noodles I have in the cupboard. There I saw a bag of medium egg noodles from @marksandspencerhk and thought "these noodles look just like tagliolini, shame I can't use them..wait..why can't I use them? They really look like tagliolini. They have the same ingredients except for semolina๐Ÿค”". I have to say I was slightly concerned with how my husband, whose mom is an Italian American, would react. You know how Italians can be when it comes to messing around with the classic. But I decided to live a little dangerously and serve my pesto with Chinese egg noodles instead pasta๐Ÿ˜† My water was already boiling by the time I took the noodles out of a bag. So I turned the heat off and cooked them gently by placing in the water for 5 minutes, which is quicker than cooking dried pasta. And that's always a bonus when you're hungry right? When the noodles were ready I mixed in pesto and added a few ripe cherry tomatoes and parsley. It might not be the classic pesto pasta we all know but it was absolutely delicious! A great example of fusion dish done rightโค๏ธ I immediately knew I'd love this dish when I read "Here, caponata (a sweet and sour Sicilian eggplant dish) meets mapo tofu (a spicy and aromatic Szechuan tofu dish) in a union so wrong it's right." I mean...how could I resist this flavor bomb? I had to give it a go. And the result? 10 times better than I expected! Although I had both caponata and mapo tofu many times in the past, this fusion dish tasted like nothing I'd ever eaten before. Yes you can surely find some resemblance to two dishes but the unique flavor harmony of this dish is in a league of its own. The caponata is sweet, tangy, spicy, slightly smoky and salty.
