And it really hasn't been that hard to be honest. I think having a rooftop with beautiful weather helps a lot. My husband I have been doing a little aperitivo hour and dinner up there with the sound of bird chirping, and it's been delightful. (Check out my story and highlight for more pics). May through June is the best time to be in Korea, as well as September through October. Although I still think about many things I'll miss about Hong Kong sometimes, I know for sure that I won't miss the humid summer that was just starting right before I left. I made this res pesto for a small farewell party with close friends at home in HK. And I used some of it to serve with buckwheat noodles(soba) for myself, because I was hungry and didn't have much pasta left at home๐Ÿ˜…. It may sound strange I know, but it actually worked! Did you notice the difference in my location tag? Yes, I'm in Seoul๐Ÿ˜ƒ I briefly talked about my leaving Hong Kong in my last post. After non stop packing, saying goodbye to friends for weeks, then installing a tracking app and filling in like ten thousand forms at the Incheon international airport, my husband and I finally arrived in Seoul on Friday night. And we're planning on staying here for about 3 months. I haven't seen my family yet as you have to quarantine for 14 days if you arrive from overseas (they take it very seriously here, there's no exception even though we're fully vaccinated, and no funny business allowed), so we're in a cute little house with a nice roof top we rented on @airbnb to enjoy the beautiful weather in Itaewon. So far so good I'd say, to be honest I was so exhausted that I was looking forward to just being at home and doing nothing for a little while...we'll see how I feel in a few days๐Ÿ˜…. โฃ โฃ I prepared a few dishes before I left HK as I knew I'd be so busy. This frittata is one of them. All you need is 300g/10.6oz. tofu, 3 large beaten eggs, 1/2 cup. kimchi, a handful of baby spinach and a sprinkle of sesame seeds. Place them all in a lined oven dish, bake at 200c/392f for 25 minutes, then you get a healthy, satisfying, delicious and wholesome superfood breakfast or lunch that will set you up for the day. I thought this dish with quintessential Korean ingredients would be a perfect first post in Seoul. Because I had this image prepared weeks ago and waiting for the right moment to post it. I had been thinking about a way to use pastel/indie pink in my food for a while, and strawberry and yogurt seemed like an obvious choice for it (raspberries are also good, but their color is slightly more intense). So I mixed frozen strawberry and yogurt (2:1 ratio) and served with pan fried salty halloumi (200g/7.05oz.), crunchy pistachio to mix sweet and savory then added Thai basil, which is the herb I've been growing in my window seal with @clickandgrow for weeks. This dish sounds a bit out there I know, but if you think about it for a second, it's mostly a combination of cheese, fruits and nuts with herb garnish, kinda like well balanced cheese platter. And trying new things and experimenting with food is never a bad thing in my book. I also love how the dish looks with the backdrop that is a fabric sample of my recent design work. I have talked about my obsession with jarred food items in the past, and especially when the jar is in beautiful color like this beetroot and horseradish chutney from @marksandspencerhk I just can't help myself. I didn't know exactly how this would taste, but I guessed it would go really well with creamy goat cheese. And since I had some thyme and chives in the fridge, I chopped them super finely and roll the cheese a few times to coat. 2 tbsp. chopped herb is enough to coat 100g/3.5oz. cheese. Herbs like dill and mint also work well with goat cheese. I love how this adds bright green and subtle but fragrant herby freshness.
