Yogurt, cucumber and herb salad with Israeli spice mix. 

100g/3.5oz. organic Greek yogurt
1 small cucumber, sliced
12g/0.4oz. herbs of your choice (I used baby arugula, mint and dill)
1 tbsp. EVOO
2 tsp. Israeli spice mix 

I bought this magical spice mix at the market in Jerusalem in April, and now I'm struggling to find out what it's called. I was told it is commonly mixed in the rice in Israeli cuisine, and the market had so many varieties that were all delicious and fragrant. I think I might have identified some of the ingredients; oil, salt, garlic, onion, pistachio, lentil, dried herbs, ground turmeric, cumin and maybe ground coriander (there's something citrusy in there) and mild dried red pepper flakes. But this mix is so beautifully complex and aromatic, even if the ingredients I listed were correct, there must be so much more going on. I regret not asking the guy at the store about every single thing that goes in even though it was Friday afternoon, a day before Shabbat, and the market was absolutely chaotic to say the least. I posted a close up photo of the spice mix on my story, I would be eternally grateful if any of you my foodie friends could help me identify itโค๏ธ

Delicious, healthy and satisfying, perfect for hubs who cannot stand mayonnaises๐Ÿ˜‰ The secret to creamy egg salad without mayo is to not boil the eggs too hard. Somewhere between runny and hard, about 8-9min. (depending on the size of the eggs) will give you perfect jammy yolk to be mixed with Dijon mustard and evoo for the ultimate breakfast toasts. I used 5 medium sized eggs with 2-2 1/2tbsp. Dijon mustard and extra virgin olive oil each (no need to be precise here๐Ÿ˜‰) then served the egg salad with chopped scallions, Himalayan pink salt and crushed red pepper.

Last breakfast I made in San Diego. Sunny side up Last breakfast I made in San Diego. Sunny side up eggs, cauliflower rice, braised cavolo nero and garlic with pickled chili. 

1 pack(3cup) wholefoods pilaf style rice cauliflower 
100g/3.5oz. Cavolo nero/Tuscan kale, chopped to bite size 
4 cloves garlic, sliced 
2 eggs, fried and basted in olive oil

Place rice cauliflower in a non stick pan over medium heat (as the package instruction). Stir and cook for 3-4min.
Mix in chopped cavolo nero and sliced garlic in a pan and add a splash of water and olive oil to keep it from sticking.
Cover for a minute or two first, then uncover and cook for further 3-4min.
Turn off the heat and season to taste. 
Plate cooked vegetables with fried eggs and pickled chili๐ŸŒถ 

I'm back in Seoul after 145 days, 6 countries, 9 cities, 8 Covid tests (luckily all negative), and memories that will last a lifetime. Please don't get me wrong, I am so grateful to have been able to do what I did but at the same time I am sooo travelled out. Traveling in the middle of the pandemic and a war happening so close to N. East Asia was not easy. And if you learned about the drama I had before going to Israel from my previous post, you'll understand how exhausting I must feel. Back in Israel after 12 years. Oh boy..what a dramatic way to get here. I've been traveling around the world for over 20 years and never had things going wrong as much as this time. First flight on 20th was indefinitely delayed resulting in rescheduling to two days later (at least this happened when we were just about to leave home in San Diego). Then the second flight on 22nd got canceled when we had been waiting at LAX (airport that will haunt me for the rest of my life) for 4 hours followed by another 4 and a half hours of waiting in line, arguing with airline people for the hotel voucher, rebooking of flight and compensation. Btw, I am traveling with 3 bags, which in total weigh about 20lbs heavier than me because my husband and I have been traveling for 5 months and we're flying back to Seoul after this trip. Eventually our flight got rescheduled to 24th. We had to fill in online immigration forms 3 times (you need to complete the form before the entry with all your flight info, the proof of vaccination and etc) and take 3 PCR tests in 5 days because Israel requires test being done in 72hrs before the flight, and another one on arrival at the airport. Good news is that I definitely do NOT have Covid, but instead I have a cold๐Ÿคง AND one of my husband's bags with 90% of his clothes and toiletry hadn't arrived from LAX until just now. Can you believe our luck? Anyways, we arrived in Tel Aviv on 25th. And this city is still beautiful and their food is as delicious as I remember. Against all odds I'm so glad that I got to spend at least a few days here.

Yes you read it out, and I know it may sound nuts๐Ÿฅœ..just hear me out๐Ÿ˜Œ I was having dinner with my husband and his Korean American friend in Korea town a few months ago talking about unusual food people eat. There he says his dad's friend's favorite foods are Kimchi and peanut butter, and he eats them together all the time. My immediate reaction was "eww", no offense but at that time I had just started warming up to peanut butter, which I couldn't stand in the past. That combo just did not work well in my head. Then about a couple weeks ago I came across with an article by @emmalaperruque at @food52 "Spicy Noodles With Peanut Butter & Kimchi"..But this time it felt a little different. Probably because I've been enjoying peanut butter so much that it has become the staple like my beloved kimchi. This recipe sounded delicious and incredibly simple. And it made me realize that kimchi and peanut butter maybe the most quintessential Korean American food combo ever existed. Such a delicious dynamic duo I'd say๐Ÿ˜‹ So I decided to give it a shot and experiment. Emma made cold noodles with the combo, but I was feeling for something a bit more warmer, so I decided to stir fry my kimchi. And since only type of noodle I had was linguine, I went all the way fusion and used it instead buying Asian noodle. And the result was fantastic. The dish was spicy, nutty and rich but not too heavy thanks to the acidity of kimchi. It's comforting, substantial and nutritious; a great way to fuel your body. One of the best true fusion meals I've ever made. โฃ

Cook 100g/3.5oz. linguine in salted boiling water for 8min.โฃ
Meanwhile stir fry 125g/4.4oz. kimchi (cut to bite size) with 1tsp. olive oil in a non stick pan over medium - medium high heat for 4-5 minutes. โฃ
Add 3tbsp. unsweetened peanut butter and 2tsp. kimchi juice in a pan. Turn off the heat and mix well. โฃ
Once the pasta is ready, mix in the pan with 4-5tbsp. starchy pasta water.โฃ
Season with a little bit of salt if necessary. โฃ
Plate and add freshly ground black pepper and sesame seeds. โฃ
